Doei or dag?

Doei is casual, closer to bye. Dag works as both hello and goodbye and is the more neutral of the two. Tot ziens is the formal goodbye and is what you will hear called after you in a shop.

Why is it goedenavond and not goedeavond?

It kept an old case ending that goedemorgen and goedemiddag did not. There is no rule to derive it from, which is why it is worth noticing here rather than guessing later.
