Questions
Is möchten really an infinitive?
Not strictly. It is a form of mögen and behaves like its own verb in everyday German, which is why it sits with the modals here. Ich möchte is the polite I would like, and you will use it far more often than mögen itself.
Are these conjugated?
No. The games use the infinitive, the form you would find in a dictionary. Conjugation is a lesson topic; this is a vocabulary drill.
Wissen or kennen?
Wissen is knowing a fact, kennen is knowing a person or a place. Only wissen is in this set. English uses one verb for both, which is why the split has to be learned rather than guessed.
