Oi or olá?

Oi is what Brazilians actually say, in almost every situation. Olá is a shade more formal and more common in writing and in Portugal. Neither is rude, and oi is the safer bet for sounding natural.

Is boa noite hello or goodbye?

Both. Unlike Spanish and Italian, Portuguese uses boa noite to arrive and to leave once it is dark. There is no separate good night, so the same phrase covers walking in and going to bed.

When would I say adeus?

Rarely, and that is the point. Adeus carries finality, closer to farewell than to bye. Tchau is the everyday goodbye, and até logo or até mais if you expect to see the person again.
