Blu or azzurro?

Blu is dark blue, navy, the blue of ink. Azzurro is the lighter blue of a clear sky, and it is why the national teams are gli Azzurri. English collapses both into blue, so the split has to be learned rather than translated.

Do Italian colours change with the noun?

Most do: rosso becomes rossa, rossi or rosse. Blu, rosa, viola and arancione do not change at all. The games use the dictionary form, the one you would look up.
