When does bonjour become bonsoir?

Around six in the evening, or once it is dark, whichever arrives first. Bonne nuit is not a greeting at all; it is what you say to someone going to bed.

Is salut rude?

No, but it is for people you already know. Coucou is warmer still and mostly used with friends and children. Bonjour is the one that is never wrong with a stranger.
