Do I need to read hangul first?
No. Every entry carries its romanisation, so you can play from day one. Hangul is worth learning early all the same, since it is an alphabet rather than a set of characters and most people manage it in a weekend.
Why do the Korean sets have five games rather than seven?
Grid Hack and The Vault are letter games: one hides words in a grid of letters, the other asks you to spell them. Hangul groups its letters into syllable blocks, so neither game works on it, and the Korean sets run the five that do.
Which set should I start with?
Question words at nine entries, or greetings at eleven. Numbers is the one to leave until you have a bit of momentum, because Korean has two complete counting systems and uses both.
